Quick & Fail-safe Fruit Cobbler
This came from our daughter's, Jennifer Shaw Kendrick's,
mother-in-law, Willie Mae O'neal Kendrick and is (1) so easy that a non-cook can make it on the
first try and (2) so delicious that you'll never be able to stop at one average
helping!
into dish:
- grease or spray
(such as Pam) about 9 inch casserole dish.
- pour in 4 cups
sliced fruit (such as peaches or strawberries; or, an experimeter could use cooked grape hulls as used in Hull Pie).
- pour one teaspoonful
lemon juice over fruit.
- sprinkle
sugar/sweetener if you like.
the cobbler crust
mix:
- 1 cup self-rising
flour.
- 1 cup
sugar.
- 1 egg (DO NOT beat
it).
- thoroughly hand mix
(with fork?) the 3 into dough "crumbles".
- pour out the
crumbles mix over dish contents.
- THEN, melt a stick
of butter (margarine or buttery spread) and pour over dish contents
surface.
- Sprinkle a little
cinnamon over the top if desired.
BAKE, preheated
375 degrees F. 30-35 minutes (longer to brown crust)
