Betty's Country Style (fried) Steak

Betty Drafts Shaw (my wife) makes the BEST country style steak that I have ever eaten.

  1. Staple ingredients:
    • meat: cubed beef or pork steaks.
    • flour.
  2. Equipment:
    • your large cast iron fry pan containing enough corn or vegetable oil to about half coiver the meat pieces.
    • metal spatula.
    • serving platter, plate, or dish.
  3. Seasoning: generous amount of salt and black pepper.
  4. Liquid component: the oil, above.
  5. PROCESS: Generously salt & pepper both sides. Then, with plenty of flour on a paper plate or in a bowl, flop each steak back and forth to generously coat all surfaces with flour while heating the oil in the fry pan on the stove with temperature dial set to medium high. Then add enough steaks so that they no more than barely touch each other. Aiming to NEVER turn each steak but once, watch the steak edges, and when they begin to obviously brown, use the spatula to turn them. When cooked to the level of doneness that you desire (we prefer well done), remove the steaks with the spatula to a serving platter, plate or dish. Serve and enjoy!
