OLD TIMEY TOMATO GRAVY
My wife remembers this gravy with joy! Her mother, Lallah Lindler Drafts used this gravy on grits as a breakfast treat to use extra tomato in the summer. Lallah tended to make a gravy for the grits out of whatever meat was being cooked, and this gravy was one option during summertime when bacon was cooked. This can even be used to make a variant of shrimp and grits.
The
Recipe:
- Meat: for this tomato gravy, use a tablespoon or more of fried bacon drippings (grease).
- Cooked fruit
contents: using either canned skinned tomatos (about two tomatoes worth) or skinned garden grown or purchased fresh tomatos, mash them up and...
- Thickener
needed: gradually stir in about a tablespoon of all purpose flour (about same amount of flour as bacon grease) and...
- Other: add tablespoon of chopped spring onion (or other) & salt and black pepper to taste.
- Cooking: Now, cook the mix of the above down into a gravy in a frying pan until thick like a gravy.
